Compared to other varieties, "Javelin" has excellent canker resistance, making it easier to keep them in the ground longer. With a lengthier growing period of 110 days, be sure to plant these seeds early. These parsnips have a distinctly sweet flavor that is enhanced be cool temperatures. Resist the urge to harvest until after the first frost in order to experience the sweetest of flavors. The roots are about 10" long and 2 1/2" across and a creamy white.
